How did a Opie meet Carl Ruiz?

Was he famous at all before he started going on Opster's show? It makes no sense. Edit: for clarification, I'm not saying he became famous after joining Opie.

I remember him being on an episode with Colin Quinn, Tom Papa, Trey Adkins and Guy Fieri. He wasn't on mic but toward the end Opie said "let's get the Mad Cuban on mic" so he was definitely in studio.
