He likely wanted to seize the opportunity to do some Bullshido to convince everyone that he's the badass ninja he claimed himself to be. I mean if the guy would have been big or trained Po would be in a lot of trouble, but here's an easy target.
And it worked! After they arrived at the XM side everyone was fawning over this crazy jujitsu that Po busted out to take this guy down. Probably let him coast for another couple years.
