Probably because he is a douche and wanted to have a special bond with Patton. Also, when they first started using "Ecstasy of Gold" I would assume Opie thought it was badass. I don't think he knew about irony as a concept until about 2012.
Years ago he would occasionally acknowledge the irony of the dramatic music leading up to the show. I couldn't believe that he thought that went over everyone's head for so many years.
They wanted the longest intro they could find to cut down on the amount of show they'd need to produce, but couldn't secure the rights to Inagodadavida.
My guess is that it's a half-truth. I think somebody (not Opie) did choose that song with the intention of contrasting the epic scope of the song with the comedy of the show. However, there's no way Opie had anything to do with that choice (which he kind of implied that he did) and Patton was definitely not the first to make that connection. I don't think Patton believed Opie's claim that he was the first, either.
Somebody probably told Opie why the song was chosen after they started running it and down it went into the bottomless bucket of ME:

They've always said that the intro is kind of a parody

I thought it was because anthony is the good, opie is the bad, and jimmy is the ugly?

Anthony has said that the song is intentionally over the top for the humor value. He said it a long time ago, so he isn't covering for Opie.

This is like digging into your change pocket for a penny. There's plenty to hate on we don't need this

I asked Anthony in his sub-reddit, doubt he'll answer.

Upvote the thread so he sees it?

He addressed it on the Kevin Pollak show. He confirms what Opie said.

Hmmm. I just watched it and don't recall that topic ever coming up.
