What is this? I've only been listening for a couple of years - someone please explain where this came from/why callers say it.

No-one laughs at it, they always sigh or "uurgh" whenever a caller starts with that.

It used to be funny, every caller (or many) would wish Jimmy Happy Birthday. It started because he insisted on a bunch of different occasions that it was his birthday (it wasn't). Fans started getting his birthday listed on local news birthday reports randomly etc.

He doesn't do it anymore because it's completely worn out - same as "hello BUBUBUBUBOOOYSSSS" which gets a similar "urgh".

I believe for the record in all honesty, his actual birthday is July 19th.

It started on Opie's birthday when an astute caller realized it and called in, when the caller said "Oh and Happy Birthday!". In that brief moment when Opie felt good about himself that a caller was saying something nice to him Jimmy jumped in with " Thank you mister!!"

After that each day a caller would say Happy Birthday to Jimmy and for a full year he would love it.

But then it got old and the callers don't realize it yet.

I've only been listening for a few years as well. As far as I understand it, Jimmy used to pretend it was his birthday all the time as a bit, so callers of course ran this into the ground. There were a few instances of small news stations that did birthday shoutouts wishing Jim, Uncle Paul, or lil Teddy Sheckler happy birthdays as well.
